Vegan/Gluten Free TOFU VEGGIE STIR FRY


INGREDIENTS
Extra Virgin Olive Oil, Fresh Garlic, Soy Sauce Gluten Free Reduced Sodium, TofuPlus Extra Firm with Added B Vitamins, Frozen Corn./Pea Mix, Frozen Broccoli, Frozen Summer Squash.


There are 4 servings per package of tofu so I cut the block in half to make enough for 2 meals. I cut the tofu into small thin strips and added it to the olive oil and garlic. I let it cook (with the cover on but not sealed) until it was golden brown. I then flipped it with a spatula and added 2 Tbsp. of soy sauce.


At the same time, I warmed the veggies in a small pot with 1 Tbsp. of Soy Sauce.

I then mixed it all together and cooked it for a few more minutes. Served on top of raw spinach.


This was NO JOKE my first attempt at cooking anything beyond a noodle in years. I actually had to buy a pan and garlic press :-) I have never been a good cook and honestly never enjoyed it either. I almost enjoyed making something that I could eat instead of cooking meat which totally grossed me out LOL.
